We use a selection of French oak barrels to mature our wines, with a little American thrown in to add diversity when required.
Given the favourable climate conditions of the South West we have implemented 'Night Cooling' to keep our Barrel Room temperature controlled. The system kicks in when the external temperature reaches 18 degrees Celsius or less. Any warmer internal air is sucked out and the cool night air is allowed to flow into the building. This system minimises our refrigeration requirements and thus our environmental impact.
A custom designed environmental waste water treatment system means that all of the water used in the winemaking process is recycled and used to irrigate our vines and surrounding landscape.
