Flametree Cabernet Sauvignon Merlot 2010
Fruit for this wine was sourced from the Wilyabrup and Walcliffe sub regions of Margaret River. Parcels of fruit were fermented in a mix of open and static fermenters using plunging and pump overs for subtle extraction. After Malolatic fermentation the wines were transferred into new and used French oak barrels which allowed the tannins to soften and has provided wonderful structure. After 14 months in oak the 2010 Cabernet Merlot was blended, egg white fined and then bottled in June 2011.
The Flametree philosophy is based on producing distinctive wines that combine great structure and balance. The 2010 Cabernet Merlot shows violets, blackberries and notes of dark chocolate on the nose. Ripe fruit flavours are balanced with fine tannins and spicy French oak. Matured in barrel for fourteen months.
