Flametree Sauvignon Blanc Semillon 2025
TASTING NOTE
The 2025 vintage highlights the strength of Semillon, contributing powerful grapefruit and jalapeño notes, while Sauvignon Blanc brings classic Margaret River guava, lemongrass, lychee and elderflower aromas. Lychee and white nectarine add a burst of flavour on the palate, complemented by savoury complexity and minerality from grape solids and barrel fermentation. Textured and powerful yet finely balanced by crisp acidity, this wine will shine over the warmer months and reward short-term cellaring for 2–3 years.
WINEMAKING NOTES
Individual night-harvested parcels were crushed, chilled, and pressed into tank for a 3–4 day settling period. After settling, the clear juice was racked and gently warmed before fermentation, either in stainless steel or oak barrels, using selected yeast strains. Around 10% of the juice was fermented on grape solids in new French oak from Bordeaux to enhance complexity and texture. The wine underwent weekly lees stirring for 10 weeks, then was racked onto light lees for a further 1–2 months with sulphur additions. This extended lees contact has contributed fine textural elements that beautifully complement the wine’s vibrant citrus fruit flavours.
