SRS Cabernet Sauvignon 2010
This is the first Cabernet Sauvignon under our Sub Regional Series. The fruit for this wine was sourced from the Wilyabrup sub region of Margaret River, long regarded as the benchmark for Cabernet Sauvignon based wines. A 5 tonne parcel of fruit was hand picked and then crushed into an open fermenter. Gentle hand plunging over two weeks and a further two weeks on skins has produced a lovely medium bodied wine. After fermentation and some extended skin contact the wine was transferred to 50% new French oak for 18 months oak maturation.
This is a classic Cabernet Sauvignon wine from a fantastic Margaret River vintage. The S.R.S. Cabernet Sauvignon shows all the perfume and structure that make Margaret River Cabernet so famous. Lifted blackberries, cassis, plums and dark chocolate dominate the nose and palate. The palate also displays some fine grained oak tannin and briary red fruits. A lovely medium bodied Cabernet Sauvignon that can be drunk now or over the next 15 years.
