Pivot Nouveau

Graciano and small amounts of Pinot Gris and Tannat were used to make this delicious summer styled wine.

Some whole bunches were left and then slowly fermented to give a nice juicy carbonic character together with spicy medium bodied red fruits. Pressed early to preserve fruit character then stainless steel fermented with natural years. Low in tannin, high in fragrance and flavour this is a great wine to have chilled with or without food. Stirred on lees and then low Sulphur addition. Unfiltered, unfined, low sulphur, vegan friendly.
